However, in the past it was not so well known, it was more a product native to Galicia and some parts of the Mediterranean Sea. Long before the octopus was preserved in industrial cold rooms, the most popular form of preservation was drying. Subsequently, prior to cooking, it was beaten to break the fibres, otherwise it would be extremely hard to eat.
Nowadays and thanks to the technological advances and several studies, it has been proved that it is convenient to freeze the octopus since, apart from preserving it, it allows breaking the fibres and therefore avoiding the traditional process of beating.
